how to eat your apple
What's the best way to eat my Kefi Treats Fancy Schmancy Apple?

We believe the best way to enjoy your Kefi Treats Fancy Schmancy Apple is to share it. Cut it into pieces and share the love!

How long will my apple keep & how do I store it?

To ensure freshness, our Fancy Schmancy Apples are made just before we sell them. Store in the fridge or a cool location, out of direct sunlight and best consumed within a week of purchase.

Our "best before" date is a few days after creation and dependant on the time of year, although apples can keep from a couple of days to a couple of weeks, depending on how they're stored.

  • Leave them in the sun ... the chocolate will melt.

  • Leave them in the cupboard for a few weeks ... the apple will brown.

  • Leave them in the fridge ... they will definitely last longer, but (there's always a 'but') remember to take your Kefi Apples out about half an hour before eating. This will give the delicious caramel time to become silky and smooth.
If couverture chocolate storage conditions change (from warm to cold, or cold to warm) a slight white tinge may develop as a result of the cocoa butter moving to the surface. This will not affect the taste. Seriously people, can you can refrain from eating your Fancy Schmancy Apple for that long?

What is couverture chocolate?

We only use premium compound and couverure chocolates from Australian and imported from Belgium and around the world. One of the brands we use is Callebaut couverture chocolate.

Ok, so you can't be bothered Googling it? Couverture chocolate is expensive high quality chocolate. In order for chocolate to be labelled as "couverture", it must contain no less than 35% total dry cocoa solids and extra cocoa butter (32-39%). The higher percentage of cocoa butter, combined with proper tempering, gives the chocolate more sheen, firmer "snap" when broken and a creamy mellow flavour that isn't sugary or too sweet.

Do you grow your apples?

Although we aren't affiliated with one particular orchard, we do have our preferred orchard suppliers. We source our apples directly from local and organic orchards in Victoria.

What varieties of apples do Kefi Treats use?

We choose only the best varieties to complement our caramel. Granny Smith apples are a perfect match to our caramel. When seasonally available, we also like to use organic, rare and heritage apples. We use the best apples available including boutique varieties (that you can't find in supermarkets) such as organic Akane, Sterma Pippin and Crofton, right through to everyday Pink Lady, Fuji and of course Granny Smith. (Did you know Granny Smiths originated in Australia?)

Click here for information on apple varieties www.orangepippin.com/apples.

What are heritage apples?

Heritage apple trees (or heirloom, as known outside of Australia) are apple varieties & breeds that originated before 1951. Most modern apple varieties you find in larger supermarket chains have originated in the 1970s.

Some of our suppliers are orchards that are part of a world wide network which is conserving antique apple varieties and protecting them from extinction. When seasonally available, we use heritage apples for a different flavour that beautifully complements our caramel and chocolate.

For more information on Heritage apples, visit the Heritage Fruit Society website: www.heritagefruitssociety.org.au.

What are organic apples?

For a farm to be certified organic, the farmers and food producers grow and produce food without using synthetic chemicals (such as pesticides or artificial fertilisers). They do not use genetically modified (GM) components or expose food to irradiation.

For more information on organic food, visit the Victorian Government health website: www.betterhealth.vic.gov.au.
